Another cold, gloomy, rainy day and all you want is a hot bowl of soup.
A complete meal in itself, with fresh vegetables and spices, makes this soup a personal favorite!!
INGREDIENTS:
- 2 cups –vegetarian vegetable stock/broth -
- 1 tsp - butter
- 1 medium- sized onion - chopped
- 2 medium tomatoes - chopped
- ¼ cup – chopped cabbage
- ¼ cup – chopped green pepper / capsicum
- ¼ cup – grated carrots
- 1 medium sized – potato - diced
- 1 green chili – chopped
- 1 clove
- 1 bay leaf
- 1 cup water
- 2 Tsp – lemon juice
- 1 Tsp –chopped ginger½ Tsp – red chilly powder
- ½ Tsp - Sugar
- ½ cup of fresh cilantro / coriander
- 2 Tbsp fresh milk / cream
- .Salt and Pepper to taste
- Croutons
- In a pan, melt butter, Add clove, bayleaf, green chilli, chopped onions. Saute till transparent.

Add all the remaining vegetables, salt and pepper to taste, sugar, red chilli powder, fresh cilantro and ginger

Mix well and pour the stock over the vegetables with 1 cup of water and lemon juice

Cover and bring it to a boil.Let it cook for around 25 minutes.

Remove from heat and strain the liquid.

Grind the vegetables into a paste and mix it again with the strained liquid.

Reheat for a few minutes
Serve hot
Garnish with cream and croutons.
